I really love going to friends and family activities when everyone takes something towards the meal. Isn’t it fun to try different salads and desserts? I often I don’t have time to fiddle about so this Lemon Coconut pie is one of my favourite stand bys. So, so quick and just yummy. There are several variations which means I can really make it with whatever I have available. Give it a try and let me know what variations work for you.
Lemon Coconut Pie
4 eggs
1 cup of sugar
1/2 cup SR flour (can use a good GF SR flour)
1/4 tsp salt
the grated lemon rind of 1 lemon
1/2 lemon juice
1 1/2 cups milk
1 cup dessicated coconut
Pre-heat your oven to 180C Place all ingredients into a food processor and whizz for 1/1/2 minutes. Pour into a greased pie dish and bake for 1 hour. It makes it’s own crust. Let it stand for 10+ mins then serve with cream or ice cream.
VARIATION:

Pour into a laminton tin and cut as a slice. As and alternative to lemon flavour use
Add OR substitute:

1/2 pineapple crushed and pineapple juice OR

1/2 passionfruit pulp OR
-
1 mushed banana OR
-
use a small orange or mango juice
