Isn&#8217;t it fun to try different salads and desserts? \u00a0I often I don&#8217;t have time to fiddle about\u00a0so this Lemon Coconut pie is one of my favourite stand bys. So, so quick and just yummy. There are several variations which means I can really make it with whatever I have available. \u00a0Give it a try and let me know what variations work for you.<\/h3>\n<h1><span style=\"font-family: 'Century Gothic'; font-size: large;\"><b><u>Lemon Coconut Pie<\/u><\/b><\/span><\/h1>\n<h3><span style=\"font-family: 'Century Gothic'; font-size: large;\">4 eggs<\/span><\/h3>\n<h3><span style=\"font-family: 'Century Gothic'; font-size: large;\">1 cup of sugar<\/span><\/h3>\n<h3><span style=\"font-family: 'Century Gothic'; font-size: large;\">1\/2 cup SR flour \u00a0(can use a good GF SR flour) \u00a0<\/span><\/h3>\n<h3><span style=\"font-family: 'Century Gothic'; font-size: large;\">1\/4 tsp salt<\/span><\/h3>\n<h3><span style=\"font-family: 'Century Gothic'; font-size: large;\">the \u00a0grated lemon rind of 1 lemon<\/span><\/h3>\n<h3><span style=\"font-family: 'Century Gothic'; font-size: large;\">1\/2 \u00a0lemon juice<\/span><\/h3>\n<h3><span style=\"font-family: 'Century Gothic'; font-size: large;\">1 1\/2 cups milk<\/span><\/h3>\n<h3><span style=\"font-family: 'Century Gothic'; font-size: large;\">1 cup dessicated coconut<\/span><\/h3>\n<h3><span style=\"font-family: 'Century Gothic'; font-size: large;\">\u00a0<\/span><\/h3>\n<h3><span style=\"font-family: 'Century Gothic'; font-size: large;\">Pre-heat your oven to 180C \u00a0Place all ingredients into a food processor and whizz for 1\/1\/2 minutes. Pour into a greased pie dish and bake for 1 hour. It makes it&#8217;s own crust. Let it stand for 10+ mins then serve with cream \u00a0or ice cream.<\/span><\/h3>\n<h3><span style=\"font-family: 'Century Gothic'; font-size: large;\">\u00a0<\/span><\/h3>\n<h3><span style=\"font-family: 'Century Gothic'; font-size: large;\">VARIATION: <\/span><\/h3>\n<ul>\n<li>\n<h3><span style=\"font-family: 'Century Gothic'; font-size: large;\">Pour into a laminton tin and cut as a slice.
